Creamy Watercress Soup


The fresh-tasting soup can be chilled for a summer meal or hot with croutons.


Serves 4, Preparation time 10 minutes, Power setting HIGH, Cooking time 16 minutes.


50g (2 oz) butter


2 large bunches watercress


1 onion, chopped


600 ml (1 pint) bot vegetable stock


1 teaspoon lemon juice


25g (1oz) cornflour


300 ml (half a pint) milk


pinch of grated nutmeg


salt & pepper to taste


4 tablespoons single cream




1. Place the butter in a large bowl & microwave on HIGH for 1 minute. Add the watercress & onion, cover the bowl & cook for 5 minutes.


2. Add the stock, lemon juice, & salt & pepper, cover the bowl & cook on HIGH for 5 minutes.


3. Cool a little, than pour in a blender or food processor & work until smooth.


4. Blend the cornflour with a little of the milk to a smooth paste, then stir in the remaining. Add the soup, return to the bowl, cover & cook on HIGH for 5 minutes.


5. Serve with a swirl of cream on each portion of soup.
