Connie Cahill shared some delicious dinner recipes made with apples! Skillet Apple Chicken Dinner Ingredients: - 1 1/2 tablespoons vegetable or olive oil, divided
- 4 skinless, boneless chicken thighs
- 3/4 teaspoon kosher salt, divided
- 3/4 teaspoon freshly ground black pepper, divided
- 1/2 cup unsalted chicken stock
- 1 teaspoon honey mustard
- 1 tablespoon chopped fresh sage
- 1 1/2 teaspoon chopped fresh rosemary
- 2 medium apples, thinly sliced, any variety
- 1 small sweet onion, thinly sliced
Directions: - Heat a large skillet to medium-high and add 1 1/2 teaspoons oil and swirl to coat bottom on pan. Add chicken and sprinkle with 1/2 teaspoon each, salt and pepper. Sauté 4 minutes on each side or until chicken is done. Remove from pan.
- Combine chicken stock and mustard, stirring with a whisk. Add remaining oil to skillet and swirl to coat. Add remaining salt, pepper, sage, rosemary, apple, and onion to pan; sauté for 4 minutes, stirring occasionally. Stir in chicken stock.
- Return chicken to skillet and cook 3 minutes or until the liquid is reduced by half. Serves 4.
Broccoli Apple Slaw Ingredients: - 1 package broccoli slaw mixture
- 2 cups chopped apple
- 1/2 cup dried cranberries
- 3/4 cup poppy seed dressing
In a large bowl, combine slaw mixture, apples and dried cranberries. Add dressing and stir well. Chill until serving. Top with chopped pecans, if desired.
