Date Posted:05/15/2017 10:04 AMCopy HTML Corn & Chicken Chowder Serves 4, Preparation time 10 minutes, Power setting HIGH, Cooking time 22 minutes. 25 g (1oz) butter 1 onion, chopped 250 g (80z) potato, diced 2 tablespoons plain flour quarter of a teaspoon turmeric 600 ml (1pint) bot chicken stock 326 g can sweetcorn kernels, drained 170 g can evaporated milk 175 g cooked chicken, diced salt & pepper to taste chopped parsley to garnish 1. Place the butter into a bowl & microwave on HIGH for 1 minute. Add the onion & potato & cook for 3 minutes. 2. Stir in the flour & turmeric, then blend in the chicken stock. Add two thirds of the sweetcorn, cover & cook on HIGH for 15 minutes. 3. Stir in the evaporated milk, the pour the soup into a blender or food processor; work until almost smooth. 4. Return to the bowl, add the chicken, reserved sweetcorn, salt & pepper. Cover & cook on HIGH for 3 minutes. Serve garnish with chopped parsley. |
