Date Posted:05/15/2017 09:56 AMCopy HTML Curried Parsnip Soup Serves 4, Preparation time 10 minutes, Power setting High, Cooking time 21 minutes 25g (1oz) butter or margarine 1 small onion, chopped 500g 1 lb parsnips, sliced tbinly 2 teaspoons mild curry powder 1 litre bot chicken stock salt & pepper to taste snipped chives to garnish 1. Place the butter or margarine in a large bowl & microwave on HIGH for 1 minute. Add the onion & parsnips, then cover & cook on HIGH for 3 minutes. 2. Stir in the curry powder & cook on HIGH for 2 minutes. 3. Pour in the stock, season with salt & pepper, then cover & cook on HIGH for 15 minutes or until the parsnips are tender. 4. Put the soup into a blender or food processor & work until smooth. Garnish with snipped chives & serve immediately, with crusty bread. |
