Date Posted:05/15/2017 09:58 AMCopy HTML Tomato & Carrot Soup Serves 4, Preparation time 15 minutes, Power setting HIGH, Cooking time 26 minutes. 25g (1 oz) butter 1 onion, chopped 250g (8 oz) carrots, sliced tbinly 500g (1 lb) ripe tomatoes, skinned & chopped 1 teaspoon sugar 600 ml (1 pint) bot vegetable stock rosemary sprig salt & pepper to taste flat-leaved parsley to garnish 1. Place the butter in a large bowl & microwave on HIGH for 1 minute. Add the onion & carrots & cook for 5 minutes. 2. Add the tomatoes, sugar, stock & rosemary to the bowl, cover & cook on HIGH for 18 minutes. 3. Remove the rosemary, than poor the soup into a blender or food processor & work until smooth. Season with salt & pepper, than return to the bowl & cook on HIGH for 2 minutes. 4. Garnish with parsley to serve. |
